If a friend asked me how to use 2 days in Cappadocia, this is the route I would give them. It covers the important places but still leaves time to look around, eat properly and enjoy where you are.
Two days gives you the highlights, but three days is safer if a balloon flight matters to you.

Use the first day for central Cappadocia. Book the balloon for this morning because, if weather cancels it, you still have tomorrow. After the flight and breakfast, visit Goreme Open Air Museum. Continue to Pasabag for the strongest fairy-chimney scenery, then take a short look at Devrent Valley. Finish in Uchisar, where the view from around the castle explains how the towns and valleys connect. Have dinner in Goreme if you want plenty of choice, or Uchisar if you prefer a quieter evening.
The second day should be a complete southern route rather than several disconnected stops. Choose an underground city—Derinkuyu or Kaymakli—then continue toward Ihlara Valley and Selime.
